Breakfast is served- Breakfast Quinoa Crackers
We just finished breakfast so wanted to share with you what we had. It's a new one for us too but ended up being really simple and quite delicious.
Breakfast Quinoa Crackers
Ingredients:
- Quinoa multigrain thins (if you have not tried these you are missing out- WAY better than normal rice cakes)
- 2 eggs scrambled
- half an avo sliced
- 2 falafels broken up
- half a red onion sliced
- Some pesto
- Cayenne pepper
- Extra Virgin Olive Oil
Directions:
- Spread the pesto on the multigrain thins.
- Add the broken falafels and remaining ingredients on top.
- Sprinkle with cayenne pepper and a good dose of Olive oil.
- And serve.
