Lunch- Salmon and Egg "burgers"


On the run again today with lots going on so we needed a quick meal with lots of protein to fill us up for longer. We also love smoked salmon so any excuse really...

 Most people are not eating enough fish in their diet. Oily fish like salmon is a fantastic source of Omega 3 fatty acids. These are polyunsaturated fats with heaps of healthy benefits. Omega 3s are well know to help reduce inflammation in the body, helping to prevent inflammatory diseases like heart disease and arthritis. They are also essential for brain health, impacting behaviour and cognitive function. So make sure you are eating some salmon or mackeral at least twice a week or other good sources of Omega 3s such as flaxseed and walnuts.

Salmon and Egg "burgers"

 



Ingredients:  


  • 4 pieces of Quinoa multigrain thins to form the burger
  • 2 eggs
  • 1 tablespoon pesto
  • 1 teaspoon tomato paste
  • 2 slices smoked salmon
  • handful of kale
  • 1/2 red onion sliced
  • 3-4 baby tomatoes quartered
  • Sprinkle of sesame seeds
  • Extra Virgin Olive Oil
  • Black pepper
Directions:
  1. In a pan, lightly fry two eggs.
  2. In the meantime, spread the pesto onto the crackers.
  3. When the eggs are done add 1 to each of the crackers.
  4. Add a slice of salmon and place some tomatoes, kale and red onions on top.
  5. Drop some tomato paste at random spots onto the "burger"
  6. Finally sprinkle with Olive oil and sesame seeds and a little black pepper and place another cracker ontop to close the "burger"
  7. Dig in, and if you cooked it just right, the egg yolk should run down your fingers as you bite into it :-)
