Almond Chocolate Rectangles


Serves 8-10



One of our new favourite treats that feels and tastes so decadent but has a little secret- its made from avocados. We have made this a few times and it's delicious. The one thing I have to say is the better the quality of the avos, the better this tastes, so make sure you wait until they are perfectly ripe and I promise you wont even taste the difference.

For the base, we grind up almonds into a flour. ( you can also buy almond meal already done if you don't have a strong enough blender  but if you have any left over, make sure you keep it in the fridge as 
it does spoil quickly.


Ingredients:
Base:
  • 100g ground almonds
  • 100g brown rice flour
  • 2 tablespoons date sugar
  • 1/4 teaspoon baking powder
  • 1/4 tsp sea salt
  • 3 tablespoons grapeseed oil
  • 4 tablespoons honey
Filling:
  • 2 large avocados, peeled and pitted
  • 120ml honey
  • 2 teaspoons vanilla
  • 120ml coconut milk
  • 75g cocoa powder
  • 1 tablespoon coconut or grapeseed oil
  • 1/2 teaspoon sea salt
30x 10 cm tart pan

Directions:

Pie crust:
Place all dry ingredients into blender and mix until well combined
Spoon mixture into pan with damp fingers and press down to distribute evenly on the bottom and sides of pan
Freeze for 25 minutes
Preheat oven to 180
Bake pie crust for 15 minutes until golden brown. Remove from oven and allow to cool

Filling:
In the meantime place all filling ingredients into food processor and puree until smooth
Spread filling evenly on crust garnish with almonds and strawberries
Serve cut into slices
